HERITAGE
THE ARTIST

He grew up in Jerusalem, a city where beauty is never decorative. It is structural, in the stone, in the bread, in the way a table is set. Before the cakes, there was painting. The eye that reads how colors resolve each other, how a composition holds its tension, that eye was already formed. He found the entremet, three days to build, and learned it completely. Then he sought out the people who had pushed the form the furthest, not to copy them, but to understand it well enough to make it entirely his own.

The cakes speak for me."

INTENTION
THE LAYERS
Slice of Matoki cake with cream, red fruit and sponge layers beside the whole cake.

Every layer is a decision, never a default. Black sesame paired with yuzu is one example: the sesame is heavy and almost bitter, the yuzu is sour and bright, and together they lift each other so you taste both more fully than you would alone. Before a cake is built, every layer like this is worked out on purpose. Beauty is never the goal. It is what happens when every decision has a reason.

OCCASION
THE GIFT

"Every cake should be as special as the person it's made for."

Matoki is what his mother called him. In Hebrew, sweetheart, a word for a child who is loved. Every cake he makes now is his way of giving back what she gave him, without needing words for it. That is why nothing here is made to be purchased. It is made to be given, to someone worthy of that much care. To your matoki.
